Windmills Grab & Go is looking for two experienced, hands-on, and service-driven Assistant Bakery Managers to join our growing operation. We are seeking individuals with strong bakery production knowledge, excellent team leadership ability, and a sharp eye for quality, presentation, hygiene, and daily operational control.

This role is ideal for someone who thrives in a fast-paced food environment, understands bakery standards, and can support the Bakery Manager in driving consistency, efficiency, and product excellence across the department.

Key Responsibilities

  • Support the daily management of bakery operations
  • Supervise bakery staff and assist with team leadership, discipline, and training
  • Ensure consistent quality, freshness, and presentation of all baked products
  • Monitor production planning, stock levels, wastage, and ordering requirements
  • Maintain strict food safety, hygiene, and health & safety standards
  • Assist in managing cost control, portion control, and operational efficiency
  • Ensure equipment is used correctly and maintained appropriately
  • Step into a leadership role in the absence of the Bakery Manager
  • Contribute to a positive, energetic, and high-performance team culture

Minimum Requirements

  • Previous bakery supervisory or management experience
  • Strong knowledge of bakery production, baking methods, and quality standards
  • Ability to lead, motivate, and develop a team
  • Good understanding of stock control, ordering, and wastage management
  • Sound knowledge of food safety and hygiene practices
  • Ability to work shifts, weekends, and public holidays
  • Strong organizational and communication skills
  • Hospitality or food retail experience will be advantageous

Job Description

Position Title: Assistant Bakery Manager
Department: Bakery / Grab & Go Operations
Reports To: Bakery Manager / Operations Manager
Location: Windmills Grab & Go

Job Purpose

The Assistant Bakery Manager is responsible for supporting the Bakery Manager in the smooth day-to-day running of the bakery department. The role focuses on production support, staff supervision, quality control, hygiene compliance, stock management, and customer satisfaction, while ensuring bakery products are produced and displayed to the highest standard.

Key Performance Areas

1. Bakery Operations

  • Assist in overseeing daily bakery production and operational flow
  • Ensure all products are prepared, baked, finished, and displayed according to company standards
  • Help maintain production schedules to meet daily demand and business needs
  • Monitor bakery readiness, product availability, and merchandising standards
  • Support the Bakery Manager in ensuring smooth opening and closing procedures

2. Quality Control

  • Ensure consistency in recipe execution, product quality, portioning, and presentation
  • Check freshness, appearance, taste, and shelf-life of bakery items
  • Minimize wastage through proper planning, rotation, and stock handling
  • Ensure all products meet the brand’s quality expectations

3. Team Leadership and Supervision

  • Supervise and support bakery staff during shifts
  • Assist with staff training, coaching, and daily performance management
  • Help maintain discipline, teamwork, and productivity in the department
  • Lead by example through professionalism, urgency, and operational involvement
  • Take charge of bakery operations in the absence of the Bakery Manager

4. Stock Control and Cost Management

  • Assist with stock counts, stock rotation, and ordering processes
  • Monitor ingredient usage and report shortages or variances
  • Help manage food cost, waste control, and efficient use of resources
  • Ensure correct storage, labeling, and handling of all bakery ingredients and finished products

5. Hygiene, Health and Safety

  • Ensure strict compliance with food safety, cleanliness, and hygiene standards
  • Maintain a clean, organized, and safe working environment
  • Ensure staff follow all health and safety procedures
  • Report equipment issues, hazards, or non-compliance immediately

6. Customer Service and Presentation

  • Support a professional and customer-focused environment
  • Ensure the bakery display area is well-stocked, attractive, and aligned with brand standards
  • Respond professionally to customer requests, concerns, and feedback where required
  • Help maintain an appealing bakery experience for all guests and customers

Minimum Requirements

  • Grade 12 or equivalent
  • Relevant bakery, culinary, food production, or hospitality qualification advantageous
  • Minimum 2–3 years’ experience in a bakery supervisory or junior management role
  • Experience in a bakery, café, grab-and-go, retail food, or hospitality environment preferred
  • Good understanding of bakery production methods and kitchen/bakery controls
  • Computer literacy and basic administrative ability advantageous
