Brahman Hills Hotel & Spa is seeking a hands-on Restaurant Manager to lead Nourish Casual
Dining Restaurant. The successful candidate must have strong front-of-house experience,
excellent guest relations skills, staff leadership ability, food and beverage knowledge, and
the discipline to manage service standards, controls, stock, cash-ups, and daily operations.
This is a full-time operational role requiring shifts, weekends, public holidays, breakfast,
lunch, and dinner service availability.

About Brahman Hills Hotel & Spa

Brahman Hills Hotel & Spa is a luxury hospitality destination situated in the heart of the
KwaZulu-Natal Midlands. The property offers premium accommodation, conferencing, weddings, spa
experiences, fine dining, casual dining, and exceptional guest experiences across multiple food
and beverage outlets.

We are looking for a strong, hands-on, service-driven Restaurant Manager to lead the daily
operations of Nourish Casual Dining Restaurant.

Nourish is a busy casual dining outlet that caters to hotel guests, walk-in guests, conference
delegates, families, and leisure visitors. The successful candidate must be operationally
sharp, guest-focused, disciplined, and able to lead a front-of-house team with confidence,
structure, and consistency.

This is not a stand-at-the-door-and-look-important role. We need someone on the floor,involved, visible, accountable, and able to drive service standards daily.

Purpose of the Role

The Nourish Restaurant Manager will be responsible for the smooth and professional running of
the restaurant operation, ensuring excellent guest service, strong team leadership, operational
discipline, financial awareness, and consistent execution of Brahman Hills Hotel & Spa
standards.

The successful candidate will manage the front-of-house team, support service delivery during
breakfast, lunch, dinner, events, and peak periods, and work closely with the kitchen, bar,
reservations, banqueting, and hotel management teams.

Key Responsibilities

Restaurant Operations

· Manage the daily running of Nourish Casual Dining Restaurant, including opening andclosing procedures, shift preparation, floor management, guest flow, tableallocations, service pace, and restaurant readiness.

· Ensure the restaurant is fully prepared before each service period, includingcleanliness, table setup, menus, condiments, service stations, cutlery, crockery,glassware, and POS readiness.

· Conduct effective pre-shift briefings covering bookings, VIP guests, specialoccasions, menu changes, dietary requirements, service focus areas, and staffdeployment.

· Maintain a strong presence on the floor during service and identify operational issuesbefore they become guest complaints.

· Support breakfast, lunch, dinner, conference, wedding, and high-volume service periodswhen required.

Guest Experience

· Ensure every guest receives warm, professional, and efficient service aligned withBrahman Hills Hotel & Spa standards.

· Welcome guests, manage special requests, check on tables, support celebrations, andmaintain visible guest engagement throughout service.

· Handle guest complaints with maturity, urgency, professionalism, and accountability.

· Manage service recovery effectively and communicate serious issues to the Food &Beverage Operations Manager.

· Confidently engage with hotel guests, day visitors, VIP guests, conference groups,families, and senior management guests.

Team Leadership and Staff Management

· Lead the Nourish front-of-house team, including service ambassadors, barmen, runners,and supporting staff.

· Allocate staff effectively according to service demands and expected guest volumes.

· Monitor staff grooming, punctuality, conduct, service pace, attitude, and guestinteraction.

· Coach, mentor, correct, and develop junior staff during live operations.

· Maintain a firm but fair management style with clear expectations, consistentfollow-through, and professional discipline.

Service Standards and Training

· Maintain and improve sequence of service, menu knowledge, upselling, beveragerecommendations, table maintenance, and guest communication.

· Support ongoing training in food knowledge, wine and beverage knowledge, POS use,complaint handling, grooming, and restaurant procedures.

· Ensure service standards are consistent across breakfast, lunch, dinner, functions,and peak periods.

· Correct poor service habits immediately and reinforce high-performance behaviourwithin the team.

Food and Beverage Knowledge

· Maintain good food and beverage knowledge and confidently discuss menu items withguests and staff.

· Work closely with the kitchen team to understand menu changes, sold-out items,specials, dietary requirements, allergens, and guest preferences.

· Support upselling of premium beverages, wines, cocktails, desserts, coffees, andspecial promotions.

· Basic wine, cocktail, and beverage knowledge will be an advantage.

Stock, Controls and Financial Awareness

· Assist with stock control, breakage control, wastage monitoring, void control, dailycash-up procedures, tip procedures, POS accuracy, and operating controls.

· Ensure all bills are correctly opened, maintained, and closed according to companyprocedure.

· Report variances, shortages, irregularities, maintenance issues, and operational riskstimeously.

· Support departmental goals by reducing losses, improving controls, and protectingrevenue.

Communication and Handover

· Complete proper shift handovers and communicate effectively with food and beveragemanagement, kitchen, bar, reservations, reception, housekeeping, banqueting, andsenior management.

· Report service issues, guest complaints, staff concerns, stock shortages, maintenanceissues, breakages, and operational challenges timeously.

· Maintain professional communication during busy service periods and ensure noimportant information is missed between departments.

Health, Safety, Hygiene and Grooming

· Ensure the restaurant operates in line with health, safety, hygiene, and cleanlinessstandards.

· Monitor restaurant cleanliness, back-of-house neatness, uniform standards, personalhygiene, and food safety practices.

· Ensure Nourish is guest-ready at all times.

Minimum Requirements

· Minimum of 3 years experience in a restaurant management or assistant restaurantmanagement role.

· Previous experience in a hotel, lodge, resort, estate, or high-volume restaurantenvironment will be advantageous.

· Strong front-of-house operational experience.

· Excellent guest relations skills.

· Strong leadership and staff management ability.

· Good food and beverage knowledge.

· Basic understanding of stock control, POS systems, cash-up procedures, and restaurantfinancial controls.

· Ability to work shifts, weekends, public holidays, early mornings, and late evenings.

· Excellent communication skills.

· Presentable, professional, and well-groomed.

· Ability to handle pressure during busy services.

· Reliable transport or ability to commute to the property.

· Computer literacy and POS experience will be advantageous.

Working Hours

This is a full-time operational management position. The successful candidate must be available
to work shifts, weekends, public holidays, breakfast shifts, lunch shifts, dinner shifts, and
special events as required.

Hospitality is not a Monday-to-Friday sport. The scoreboard runs on weekends too.

Remuneration

Recommended salary range: R12 000 – R18 000 per month, depending on experience, operational
ability, leadership maturity, and suitability for the role.
