Group Executive Chef Jobs in Cape Town at Dharma Creations
Group Executive Chef for a well established restaurant group in Gardens, Cape Town.
Non negotiable requirements:
– Must be located in Cape Town or willing to relocate
– Must have experience in a Group Exec role for at least 5 years previously
– Must be well versed in managing a large contingency of staff (250+)
Roles and Responsibilities
1. Development of new recipes
2. Be active in cost controlling and maintain of food cost
3. Train and manage kitchen personnel and supervise/coordinate all related culinary activities
4. Create custom menus for functions and determines portions sizes
5. Manage all recipe folders and keep them updated
6. Manage waste and staff food records
7. Staff training
8. Ensure staff adhere to recipes in place to facilitate consistency.
9. Ensure all food is prepared as per food preparation requirements
10. Ensure meals are produced on time, and sufficient quantities are available for the various areas
11. Maintain stock levels of all kitchen supplies
12. Oversee and supervise all kitchen staff
13. Ensure all staff are aware of their duties and what is expected of them
14. Teach new staff skills they require to perform their roles to the required standard
15. Delegate duties to kitchen staff as per the menu requirements
16. Oversee and monitor the work of kitchen staff to ensure all tasks are done as required
17. Give staff feedback on their performance to enable staff development
18. Managing kitchen staff HR
19. Manage kitchen operating equipment stock
20. Ensure wastage is minimized by careful supervision of food preparation methods
21. Ensure proper hygienic storage methods are utilized to prevent food loss
22. Oversee the ordering and control of stock levels
23. Ensure staff are aware of and follow safe work practices at all times
24 Managing a team of Head Chefs in each kitchen
