Position Overview
An established and popular hospitality group is seeking a highly skilled and experienced Head Baker to lead and manage bakery production for a new operation at Sandton Gate. The successful candidate will receive initial training and onboarding at an established restaurant in the Oaklands area to ensure alignment with our quality standards, recipes, and production systems.
We are looking for a passionate and detail-oriented professional with extensive experience in artisan baking who can consistently produce high-quality products while maintaining strong kitchen organisation and hygiene standards.
Key Responsibilities
- Oversee daily bakery production and ensure consistent quality across all baked goods
- Prepare and bake a variety of items including artisan breads, biscuits, cakes, croissants, sourdough, and focaccia
- Develop and maintain production schedules to meet daily service requirements
- Ensure precise measuring, mixing, proofing, and baking techniques
- Monitor oven temperatures, proofing conditions, and baking times
- Maintain strict food safety, hygiene, and health standards
- Manage ingredient storage, stock rotation, and inventory levels
- Ensure bakery equipment is used correctly and maintained properly
- Maintain a clean, organised, and efficient working environment
- Work closely with management and kitchen staff to ensure smooth daily operations
- Assist in training and mentoring junior bakery staff where required
Minimum Requirements
- Minimum 5 years’ proven experience as a professional baker, preferably in a restaurant, bakery, or hospitality environment
- Strong expertise in artisan breads, croissants, sourdough, focaccia, cakes, and biscuits
- Excellent knowledge of baking processes, ingredients, fermentation, and dough handling
- Ability to work early shifts, weekends, and public holidays
- Strong organisational skills and attention to detail
- Ability to work efficiently under pressure in a fast-paced kitchen environment
- Professional work ethic and strong team collaboration skills
