Key Accountabilities/Outcomes
- Provide leadership to associates within the department.
- Implement systems and procedures to either maintain or improve operations.
- Manage the day-to-day administration of the store regarding ordering raw materials, packaging, uniforms, equipment and any related tasks deemed necessary to operate efficiently.
- Ensure that all new associates are inducted into their role.
- Ensure that all associates working in the store are thoroughly trained and competent in both product knowledge, various product applications, hygiene and safety, upselling, point of sale usage and customer service.
- Recruit new or replacement associates when required.
- Implement corrective actions, when necessary, to ensure that the associates follow company procedures.
- Maintain associates time and attendance. Manage overtime and process leave for all associates.
- Revitalize associates by fostering excitement and teamwork to sustain a positive and engaging work environment.
- Responsible for updating and maintaining pricing of all products on all platforms – Tablet POS (point of sale system), online store and uber eats.
- Responsible for new product innovation and specials on a regular basis to move stock and prevent stock from expiring.
- Create promotions related to stock received and ensure the stock is sold in store and online as well as priced correctly.
- Uphold the company’s standards for excellent customer service and strong client relationships.
- Promote and maintain high standards of products and cakes produced which reflect the high standards of the company.
- Market the store with outside agencies or customers with the assistance of the Marketing department, attract new customers and make surrounding businesses aware of the product offerings.
- Identify operational shortcomings and recommend corrective training or implement systems to rectify.
- Ensure that recipes on the POS system are correct, food handlers follow these recipes, and products are costed and priced accordingly.
- Conduct regular inspections to ensure standard recipes and processes are being adhered to.
- Roll out accurate price increases across all platforms when required.
- Ensure that all equipment is accounted for and maintained over time.
- Ensure that all stocktaking is conducted promptly in accordance with company policy. Stock counts must be accurate and reconciled against the inventory recorded in the POS system.
- Change and update pricing on the POS system as necessary.
- Manage wastage and implement wastage reduction strategies to control waste.
- Implement and maintain the company uniform standards.
- In conjunction with the Finance and Administration department, set annual capital expenditure and operating budgets.
- Manage the annual expenditure and future expense budgets.
- Control and monitor revenue streams and expenditure in terms of pre-agreed budgets and facilitate the production of performance and accounting reports at pre-determined intervals.
- Develop recipes and the costing thereof to achieve a suitable price within the expected margin requirements
- Control of the POS system and accuracy of the reports required.
- Book and manage the deliveries for online orders accurately and fulfil orders within the timeframe of the customer requirements.
- Manage social media platforms – Facebook and Instagram to promote products on sale or promote seasonal product programs.
- Provide accurate quotes and invoices for customers as they arise.
- Manage the Barista-operated coffee machine and ensure that all associates are trained and equipped with using the equipment.
- Perform any reasonable task required for the optimum functioning of the department.
Qualification/Skills/Experience
- Tertiary qualification in food production, professional chef or hospitality.
- Minimum of 5 years’ experience in a food or bakery environment, including management of workplace operations.
- Experience managing a fast-paced food outlet.
- Computer literacy – Microsoft office, use of a Tablet, POS system, Canva
- Strong proficiency in baking and confectionery, with solid theoretical knowledge.
- Comprehensive understanding of food production and bakery operations.
- Skilled in recipe development and cost analysis.
- Proven ability to manage budgets and forecast future financial needs.
- Experience in leading and directing a team effectively.
- Demonstrated ability to work accurately under pressure.
- Capable of working independently with minimal supervision.
- Valid driver’s license with reliable personal transport.
